Weekend before last I was a bit, well, actually a lot, under the weather and spent about 36 out of 48 hours in my bed, under a mountain of blankets, watching VH1's Top 100 Songs of the 1980's and lots and lots of Food TV.
I love Little Neck Clams so I knew I had to try this recipe for Drunken Clams. Basically you steam the clams in shallots, olive oil, roasted garlic and beer and serve it over spaghetti. It was excellent.
Last night I made it for 8 of us girls from work and what a delicious dinner party it was.
Because I can never leave anything alone, I changed the recipe by adding some crushed red pepper to the sauteed shallots and adding chicken broth as well as the beer. Garnished with chopped fresh tomatoes, parsley and green onions.
